Thoreau's writings celebrated nature, simplicity, and living with intention. Drawing inspiration from his extensive observations of plants and the herbal infusions he referenced in his writings, Simpson & Vail created this colorful, completely caffeine-free blend of fruits, herbs, roots, flowers, and warming spices.

Dried apple, cinnamon, spearmint, ginger, beetroot, chicory, oatstraw, red clover blossom, sarsaparilla root, and rose petals come together in a wonderfully complex herbal cup. It brews to a beautiful red color with fresh mint and floral aromas, a slightly tart character, earthy undertones, and gentle notes of rose and oats.
